Can I bake gingerbread house pieces ahead of time?

I want to make a gingerbread house for my grandkids. I've made many of them over the years but for this one, I'd like to bake the pieces ahead of time and assemble it just before they arrive (in about a week and a half). Will the pieces stay crisp for that long? What would be the best way to store them so that they remain rigid enough to build the house? Tightly sealed container? Or loosely wrapped? My fear is that by the time I'm ready to put the thing together the pieces may have softened.
