I made this corn beef recipe twice this weekend. I had a lunch where four people ate every bit of a 3.25 pound corn beef - so dissapointed that we were not able to have left overs and a reuben we made it again that afternoon. Very easy
Rub a 3 to 5 pound corn beef with brown sugar ( about 1 cup)really well all over. Do not use spices that come with package. Place in a dutch oven on a rack. Pour a bottle ( I used 20 0z but did not need that much) of Guiness stout - cover and let cook for 3 to 3 1/4 hours at 300 degrees. Turn the corn beef over 1/2 through the cooking. Let rest 15 minutes. It was so tender and tasty.
