Last night we were out to dinner with our friends DebbieW and her hubby Michael. I brought up the concept of Avocado Ice Cream after having watched a Food Network T.V. show on Avocados. DebbieW said that Carb Lover had spent a goodly amount of time, perfecting this treat.
The following recipe is one I haven't attempted yet, but from an Alton Brown episode, I did get the urge. He explained similarities between Avocado and eggs regarding protein,fats,emulsification, and how a delicious ice cream might be made using them.
Would love to get your opinion on the following recipe, and/or how to resurrect one that you may have posted.
A.B.'s Avocado Ice Cream
12 oz. Avocado flesh
1 Tbs. Lemon juice
1/2 cup granulated sugar
1 cup heavy cream
1 1/2 cups whole milk
In a blender combine all and blend until smooth.
Chill mixture, and then freeze in an ice cream maker.
