Authentic cooking experience in NOLA?

Me and my fiance are having our wedding reception in NO and we both love to cook. We'd like to do a Cajun or Creole cooking class in NO. My fiance grew up cooking collards, grits, black eye peas, etc ... traditional southern food so we're not looking for that.

I've looked at the usual cooking classes you can google and the other posts on this site and none of them appeal to me. A local chef or great home cook would be great. Also, if they were African American that would be even better but not required. Hands on only please, too. Thanks in advance for any help!
