"Authentic" Chinese Food, vs Chinese-American Food

For a review of a memorable lunch of authentic Chinese food, please check out my Mid-Atlantic review of Grand Shanghai in Edison, N. J. yesterday.

My questions are:

1. Where can I find "middle of the fish" in an authentic Chinese restaurant in PHilly?

2. Which place is serving "crab and pork juicy buns" that knock one's socks off? They are large versions of soup dumplings, but the ones I ate yesterday had broth that was dark, deep flavored and very special.

3. Which restaurants in Chinatown or elsewhere cater to a predominately Asian clientele, even though they may have a separate menu for others?

Thanks much! I didn't realize what I was missing until yesterday.
