As a relative newcommer to the Chowhound world, I have found myself stumbling once or twice on the concept of authentic cuisine. In some cases, it seems to be an easy call and other times I'm not sure. I guess to me, I have always thought of authentic foods the way the supreme court thinks of pornography: I can't define it, but I know it when I see it.
Also, the fact that a restaurant does or does not serve authentic dishes does not always indicate if it is a "good" or "bad" place.
So here is my challenge: Pick a cuisine or food style (Italian, Mexican, Tapas, Sushi, BBQ, etc) and give a definition or description of what makes that food authentic or not authentic. Also include your favorite (or most hated!) authentic and non-authentic restaurants of that type.
Anyone up to the challenge?
