I'm looking to buy a new 2 to 2.5 qt saucepan and can't decide between the Atlantis and Industry5/5Plus. SLT has the 2.3qt Atlantis for $129, so it's tempting to try since everyone always praises this line. At the same time, I wonder if the thick disk offers any benefits over clad in a saucepan, or if clad is the better choice for this application. Honestly a pan of this size will likely mostly be used for simple things like rice, beans, pasta, reheating small amounts of tomato sauce, so a top quality pan isn't a need so much as a want. At that size I would also be making sauces and need something that won't scorch milk or burn a roux, but I think I want a clad saucier for that. I did briefly have an AC 2qt saucier, but I returned it because the lack of pouring lip drove me crazy. FYI, I cook on gas.
