I'm making a cook's illustrated recipe that calls for 2lbs. of ground beef. I just realized the package I have is only 1.27lbs. What to do? Should I half the recipe? Or just make it as is? The rest of the recipe is spices, veggies, 2 cans of kidney beans, and 2 28oz. cans of diced and pureed tomatoes...maybe I should lessen the liquid??
