Artisanal / mixing wines

So, a regular at Artisanal, the service has been going downhill recently. Well, whatever - the food is good enough that I dont care.

So, waiting for my reservation tonight I was propping up the bar next to the service area. All was going well, drinks going down nicely and the barstaff were swearing like sailors which made me laugh (angsty barstaff > all, and they were having amazing issues with lack of wine glasses). Then, one of the barmen was pouring a glass of wine to go to one of the tables when he said to the waiter for that table:

"Well thats the last of that one (wine), I'll top it up with this"

and he topped up the glass with a completely different red that was stood nearby. I was completely shocked.

So, a question to the barstaff who frequent this board: does this happen a lot? Should I be worried every time I order a glass of wine?
