WOW a question I had was answered w/o even asking for an answer. Chowhound's usual email arrived today and when I clicked on the link about bean storage. Point being; a few days previous I had cooked some dried garbanzo beans in my Instant Pot. My plans were to use the stash for subsequent meals, including some hummus. Once I had the beans properly cooked, they were stored in a Pyrex container and refrigerated. Upon opening my container to pull out some hummus makings, I noted with surprise, some gelatinous fluid sitting atop of the beans. No aquafaba was this; the fluid stuff is really like "jello." Has anyone ever seen this when cooking dried garbanzo beans? Also, can anyone tell me if they have seen this phenom. Hopefully, some scientifically oriented soul can explain what occurs? I'm not sure that this gel can be used they way aquafaba is discussed in this posting. Thoughts anyone?
