Applewood Branches for Smoking

Hi all,

I am going to bbq baby back ribs tomorrow for the first time. Instead of hickory chips, would it be ok to use some applewood? I have a small bundle but it is OLD (talking years). Last time I used a couple pieces - about 8 inches with a diameter of 1/8 to 1/4 inch - for a 5 pound chicken and it completely dominated the taste. I don't want to make the same mistake again. I don't have hickory chips but I will certainly get some if it is the best option.

I have 3 racks of ribs at 4.75 pounds and will use a grill rack.

I was just going to use Steven Raichlen's beginner rib recipe (rub and mop) and use lump charcoal.

I am also open to tips!
