I took the advice on many of the posts and my applesauce was delicious and enjoyed by all. I did, at the last minute, add a big chunk of sweet butter and I think it put it over the top. It is Mother's Day and anything goes right? Being here in So. California, I couldn't find some of the suggested apples but I did stay away from the red delicious. I ended up getting some very large Fuji's and they worked fine. The consistency was perfect. I used brown sugar and a little cinnamon. It tasted good but needed some oomf. Hence, the butter. I didn't put it through a food mill but used my immersion blender and left it partially chunky. It was soooo good. Thanks for all the suggestions.
