Went apple picking - tons of apples, best way to keep them?

Our annual apple picking adventure commenced yesterday, and I now have about 8lbs of apples. They are a mix of winesap, empire, macoun and maybe a few jonagolds.

I'm wondering
a)what's the best way to keep them if I don't want to eat/cook with them right away and
b) any good, quick recipes - 7 month old who doesn't let me spend the hours in the kitchen I used to, so I try to limit my cooking to things that can be made in under 30 minutes (at a clip) or if I get stalled halfway through can be picked up at a later time.
