One of the comida del dia is filete de pescado: tilapia filets in a paper-thin, nicely seasoned breading which after a spray of lime reaches the heavens; rice; mashed mayacoba beans, thicker and thus better than they were a year ago; a chopped lettuce salad topped with an avocado wedge; and A.T.'s made-to-order tortillas. Ask for the mole verde Senora Sanchez has made just for this entree. It's minced tomatillo, green pepper, and onion at room temperature.
I've long favored the salsa rojo over the salsa verde at A.T., but this week the rojo has lacked the arbol color and flavor, so I turned to the verde today. The rojo will have a hard time winning me back. The salsa verde is creamy with a sunny, almost sweet taste. Senora's daughter Rocio explained that it's made with boiled tomatillos.
The other comida del dia are chiles rellenos, barbacoa, and bistec en chile pasilla.
