I'm looking at making a recipe of Chef Ana Sortun (from Oleana in Cambridge, MA), tonight, but I know I don't have aleppo pepper, one of the baharat spice mix ingredients. And I don't live near enough to Cambridge to check out Christina's Spices before they close tonight - nor does the gourmet food store in the town where I work have it.
From what I understand, aleppo is similar to ancho chili (which I also don't have) with a bit more heat and more tartness. Does anyone know if I could jury-rig something similar? I have sumac powder (for the tartness), chili powder, and some chipotles in the freezer (although they were in adobo, so I'm not sure if it would be the right mix).
Anyone? Could I mix black pepper, ground red pepper, and sumac for a near approximation?
