Al pastor variations

I grabbed a couple of tacos from a truck parked near the Oakland Coliseum the other day (I don't remember the name, I wasn't in chowhound mode, I was in late-for-the-game-hungry-but-don't-want-to-pay-for-ballpark-crap mode).

The al pastor was delicious, but surprisingly had chunks of pineapple in cooked in it. Does anyone know if this is a regional variation or if it's just a personal style of whoever creates the food for this truck?
