Help, Advice Needed!

We are putting on a 4 day gathering for about 350 car people. We are contracted with a Nevada hotel and part of the contract stipulates that they are to provide all food. Unfortunately, their food is substandard and the prices are ridiculously high (Turkey sandwhich, chips and cookie for $15.00, etc.) I would love to be able to go to the local Costco and buy snacks, cold cuts and veggie trays for 1/4 of the price they are charging us and provide them in the garage where everyone hangs out during the day, but am weary of the possible ramifications. Meanwhile breakfasts, lunches, dinners and drinks for all 4 days will be provided by the various restaurants in the hotel, so they will be making a nice profit off us. We have very limited resources and money is tight.
Any ideas or personal experiences are VERY welcome!
