Advice on 2 lb whole snapper

I was at the market yesterday and they had some great looking snapper that I couldn't resist, so I am now the owner of a 1.86 lb fish. Its cleaned w/ head on and I was thinking about stuffing it with some herbs and lemon slices and cooking it on the grill. I'd welcome any suggestions on preparation. I have fresh tarragon, dill, basil, mint and cilantro on hand and a cedar plank at my disposal, as well as a choice between a gas or charcol grill. How do you check for doneness on a whole fish? Thoughts on side dishes are welcome. I also wonder about the size - is this too much for one person and should I try to find someone else to help eat it? TIA...
