Additions to homemade Pasta and Bread

Sometime ago, I posted a request for suggestions as to additions to homemade pasta and homemade bread that would mimic new commercial products that are being advertisied as heart healthy, and higher fibre.

Unfortunately I didn't get any replies, but I am reading in the Globe and Mail today, that one of the commerical additions to pasta is INULIN, a white powder extract from the chickory root. It is touted to stimulate the growth of beneficial bacteria and add fibre to foods.

Does anybody already add this to their homemade goods, does anybody know of a source for Inulin?
