Polo's was ok, but I learned that it is mostly so popular because of Polo himself, who came to Ada as a young non-English speaking minimum wage cook at another restaurant, but the locals figured out he was a very good cook, and very personable, so a local businessman backed his first restaurant. He now has four, and his daughter has a tiny side-of-the-road place called "Whip & Dip" that has, I hear, the best burgers in town, they call "pepperburgers".
