I've got these two sad little acorn squash that I brought home from work about two weeks ago now, and it's time they get used. Stuffed squash is kind of a meal on its own, so I don't want to go that route.
What can I do with these things that would go well with tacos? I'm pretty inexperienced with winter squash. :/ (All I've ever done is butternut squash whoopie pies and a bnut squash soup.)
I do have cabbage as a back-up, but I wanted to try something new.
