Accomplished... Lemon Creme Fraiche Ice Cream

Well, I couldn't find a recipe anywhere for it, so I looked around and made up my own, based on about 5 related recipes and then just going from my gut. It turned out awesome - better than I'd have thought. Here it is, if anyone is so inclined (this would be great with good, fresh fruit - especially blueberries or rasberries).

Lemon, Crème Fraiche Ice Cream

1 1/2 cups heavy cream
1 cup whole milk
1 cup sugar
Vanilla extract
Pinch of salt
6 egg yolks
1/2 cup fresh lemon juice
1 cup crème fraiche

Heat cream, milk, sugar, salt and a few drops only of vanilla extract in a saucepan to a simmer. Turn off heat of milk mixture. Whisk eggs in bowl. Temper eggs by slowly whisking in ½ cup hot milk mixture into eggs. Pour egg mixture into saucepan, turn heat to medium and whisk until it reaches no more than 175 degrees. Strain into bown through a fine-meshed seive.

Let sit for 5 minutes. Whisk in lemon, then crème fraiche. Cool in refrigerator. Once completely cool, churn in ice cream maker.

Eat. Enjoy. Yum.
