I am curious to know which recipe you think is the best use for apples. I've had a dessert once that had hot steamy melt-in-your-mouth apples, topped with a very light cake/pie-like topping and a bit of vanilla ice cream. I cannot recall what it's called or if it can be replicated.
I haven't made many apple desserts so I wouldn't know, but I've made apple kuchen from the French Laundry cookbook and it was pretty great. Served with a hot custard sauce.
