99 Cent Only gourmet

Dinner tonite was mostly 99Cent Only items. I roasted Roma Tomatoes and Zucchini in the convection toaster oven. Put them in a blender with Onion Powder and Chicken Broth and blended briefly. I put it in a small pot and started to reduce it. I added Sun Dried Tomato Strips and Parmesian Cheese. At the last minute I added some Pesto Sauce. I put the sauce over Polenta Cakes that were made from Instant Grits that I cooked with a bit of salt and pepper and Ricotta Salata Cheese. Spooned it into 2 ramekins and chilled until firm, then cut into 4 hockey pucks. Disks were dusted in flour seasoned with Cajun Seasoning and deep fried at 370 degrees for 5 minutes until medium brown. It tasted so rich but had minimal oil. Only about 1 ounce of cheese for 4 disks. Served with the Wild Game wine. The only non 99Cent items were the flour, fryer oil and Pesto Sauce. The diversity and quality of products that you find at the 99Cent store never ceases to amaze me.
