Hi, we typically go to my Moms every Easter for a great Italian feast. Unfortunately this year hubby is recovering from shoulder surgery and we can't go. I have also just been informed my son is bringing a few freinds. I don't feel like going crazy, LOL, because I'm just plain tired. Anyhoo, even though it is not traditional for us at Easter I would like to make this pork roast. I would like it to lean Italian, I'm thinking of maybe marinating it the day before in wine, garlic and herbs. Then slow roasting it with both Yukon gold and sweet potatoes in the same pan.
Problem is although I've been cooking for over 40 years I have never cooked this type of roast. I'm not sure what temp (?300)m how long or if I can cook the potatoes with the pork because I'm cooking at such a low temp. Anyway, any help or advice would be greatly appreciated.
