é and what else?

I'm a NYer visiting Vegas in mid June for about a week. I plan on trying to get reservations at José Andrés' é restaurant. I also plan on being in LA before Vegas and am going to Andrés' SAAM restaurant in the Bazaar. Might be Andrés overkill, but why not, right? :)

What other high-end restaurants are worth visiting? FYI, I've been to Vegas a few times and have eaten at CUT, Rosemary's, Michael Mina, and Lotus of Siam. I know LOS isn't quite "high-end", but it's generally recommended to go to.

I'm probably going to pass on the Robuchon restaurants, steakhouses, and since I live in NYC, I can pass on some of the restaurants that have a sister restaurant in NYC (B&B, Le Cirque, Aureole, etc.).

I guess some of the general contenders are Guy Savoy, Picasso, Sage, and Twist. Comments on them? Restaurants I'm missing?
