Was wondering if any of you Zuni-types out there would condone me cooking a 5 lb chicken with the Zuni method.
I bought a chicken before I had fully read the recipe and was in a hurry so I just told the butcher "Yeah yeah, 5 lbs is fine" and didn't realize my error as 3.5 lbs seems to be the max. I've had the chicken curing in the fridge for 3 days.
What does anyone think? Should I increase the cooking time to accommodate? Or should I half the chicken prior to cooking and cook in 2 halves...
Any thoughts would be appreciated!
