4 Days in March, where to dine?

So my GF and I are going to be in Paris for four days in about a month, over a Friday to Monday. The weekend makes planning a bit difficult. Our flight arrives at 11:50 AM, so I'm thinking Friday lunch won't work. So far, I have reservations for Monday lunch at Taillevent. I would have liked to try some of the other high end restaurants for lunch, but given when we will be there that probably won't work.

Some of the other restaurants I was considering are Les Elysees de Vernet, Ze Gallerie, Au Fils Des Saisons and Senderens. Thoughts on these and other recommendations would be welcome.

Also, as my means allow only so much extravegance I have left off some of the more highly regarded (and highly priced) establishments such as L'Arpege, L'Ambroisie, Gagnaire, etc. Would we be better off doing one meal at one of these instead?
