3 Star Michelin for Wife's Birthday

I am planning a special trip for my wife's 30th birthday this March. I'm trying to choose a special restaurant, one where atmosphere is not cold or austere. I'm ok with more traditional restaurants over something overtly modern and molecular, but overall looking for a special meal. We don't want a vegetable only restaurant. These caught my eye:

Alain Ducasse at Plaza Athene
Savoy
Epicure at Le Bristol
Le Meurice (two star)
L’ambroise
Leydyon

There is a small chance my wife may not be able to drink alcohol or eat raw fish that month if that affects anything ;) The diner does not need to be strictly 3 star, but for a special occasion I thought it might be ok to splurge.

I also am planning to go to Burgunday/Loire as well, so reccomendations there are welcome.
