I contacted most if not all of the three Michelin star restaurants in Paris, and here are their schedules for July and August 2009:
L'Arpège, Guy Savoy, Le Cinq, and Bristol are all open
Ledoyen is closed from Aug 1 to Aug 24
Senderens is closed Aug 1 to Aug 24
Pre Catelan is closed Aug 1 to Aug 25
Pierre Gagnaire is closed from Jul 25 to Aug 25
Le Grand Vefour is closed from Jul 28 to Aug 25
Plaza Athenee is closed from Jul 17 to Aug 25
L'Ambroisie, Taillevent , and Meurice are closed all of August
Could not reach L'Astrance (no surprise)
Hope this helps!
