3 days 2 nights in Seattle - critique, suggest?

I'm actually an LA Chowhound, but I'll be driving down from Vancouver for a mini roadtrip to Seattle. I figure I have 2 dinners and maybe 3 lunches in town.

I know I already want to go to:
- Salumi for a lunch
- One of Tom Douglas's restaurants (either Dahlia Lounge or Etta's) for dinner
- Harvest Vine sounded really good based on a review

For grazing, I'm going to:
- La Panier
- Jack's fish spot

What do you think of my choices? If they're good, I'll need to choose probably 2 more restaurants for lunch or dinner. Can you suggest any other restaurants that: 1) showcase local cuisine (Pacific Northwest cusine), 2) feature local produce and suppliers, or 3) are Seattle 'destination' restaurants?
