What would you do with this?

I have a pork loin that I cooked monday night for dinner. I had leftovers tonight. It is, I guess you would say, crusted in a mustard, sage, marjoram, and soy suace mixture. I want to try to extend it a little more. Is there something you would try? My guess is that there is a pound of meat left.
