Last night I knew that I was going to make a roast chicken, but didn't know what else. I usually roast chicken on a bed of potato and onion, however I didn't have any potato. I also had brussel sprouts, garlic scapes and beets (with the tops on). So I roasted the chicken on onion and some garlic scapes. Then I parboiled the beets (saving the tops). I sauteed the brussel sprouts in butter, oo, shallots and garlic scapes. Added chicken broth and chopped up beets and let simmer. When chicken was done I sauteed the beet greens in the juices.
It all turned out okay, but not great. I'm very new to experimenting, and would love to know what you would have done with those basics.
