1lb Ground Buffalo Meat...

So I guess I've been watching too much Iron Chef America because last week I bought a 1lb of ground buffalo... I was thinking of perhaps making some meatloaf, but now I'm wondering if the meat is too lean for that... Meatballs maybe?. I would like the use the meat for a dish (Not a one off thing like a Hamburger)

So, I wonder, has anyone cooked this type of ground beef and so, how should I treat it differently?
