We've got another shortcut. In this egg-white frittata with shrimp, tomato, and spinach, you can buy packaged liquid egg whites instead of cracking and separating 16 eggs. You don't even have to separate the egg whites from the yolks if you don't want to. Then you can almost half the number of eggs needed. This recipe says it takes 25 minutes with an active 15 minutes, but then there's a sub-recipe for oven-roasting the tomatoes. It's easy, but yes, it takes awhile to roast. So you can really cheat and buy canned fire-roasted tomatoes. Your frittata won't taste as fresh, but in a pinch it works.
