Creole mustard is grainy and pungent, made from brown mustard seeds steeped a long while in white vinegar. Some say it tastes almost the same as stone-ground Dijon or other whole grain mustard, but others swear it has an extra zing. It's a key ingredient in Louisiana-style remoulade sauce (perfect for dipping fried seafood), but also great on sandwiches.
