Cellador offers a welcome change from the hastily made, one-dimensional enamel-strippers that have flooded the market since sour beers became all the rage. Brew master Kevin Osborne devotes his entire operation to meticulously crafted oak-barrel fermented beers that are earthy, funky, and complex. Unfortunately, the brewery’s doors remain closed to the public, and bottles, which pop up at select craft beer specialty stores including K&L and Vendome, fly off the shelves. So if you spot any out in the wild don’t hesitate to grab ‘em.
