Pecans turn up in many Southern desserts, which makes sense since the nuts are widely grown in the South. Georgia is the top producer, but Texas holds its own; depending on the year, they usually fall anywhere between second and fourth in line—and they've adopted the pecan as their official state nut. Most German Chocolate Cake recipes use raw pecans, but toasting them before chopping intensifies their taste and crunch, never a bad thing. (You can always toast the coconut too.)
