Green Chiles and Ham Breakfast Taco
For a single taco you’ll need a corn tortilla, half a small poblano chile (seeded and cut into strips), some strips of ham, a large egg, salt, and some oil. Set a small nonstick skillet over medium heat and add a little of the oil. Add the poblano strips and sauté until they soften, about 10 minutes. Add the ham and sauté together 5 minutes. Push the ham and poblanos to the sides of the skillet, add a bit more oil to the center, and break in the egg. Sprinkle with salt and fry until the white is set. Heat your tortilla (we do it directly over a gas flame till it’s puffed and a little blistered), and tip the contents of the pan on top. Serve at once.
