Oh, the BLT, a classic Americana sandwich of bacon, lettuce and tomato, placed between two toasted slices of bread generously slathered with mayonnaise. The BLT was the inspiration for these tasty fried egg tacos with crispy bacon and sautéed ripe tomatoes in soft corn tortillas. Just because there's a fried egg in there doesn't relegate this dish to breakfast only. It can be equally satisfying at dinnertime too. Cilantro keeps it a bit Mexican still, plus adds some green into the fold.
