Executive Chef Roland Mesnier pulls raspberry soufflés from the oven in the W.H. kitchen before serving them at a State Dinner honoring Queen Margrethe II and Prince Henrik of Denmark, during George H.W. Bush’s administration. The souffle had some troubles, reportedly because the whipped egg whites would not come up. Mesnier had to regroup in a hurry, even changing the recipe a bit, to make sure the souffles—and the State Dinner—were not a flop.
