Thomas Nash tips the board to a seasonal Mexican specialty he found at La Torta Gorda, a Puebla restaurant on 24th Street in San Francisco. The dish, chiles en nogada, reflects the colors of the Mexican flag with green poblano chiles, white walnut sauce, and a sprinkling of red pomegranate seeds.

La Torta Gorda’s version comes stuffed “with a slightly sweet and salty picadillo of beef, raisins, nuts, apples, spices … perfect with the luscious walnut sauce.” This late-summer dish in Mexico might be on the menu here in the city through January, as long as pomegranates are in season.
