The Metal Disks of the Taqueros

streetgourmetla says all his best Mexican finds lately are from taqueros cooking with comales de acero, metal disks with a convex center, surrounded by a well for frying. His current favorite comes from Tacos y Cemitas Chavez, a little taco tent in the no man’s land around Sun Valley that heats tortillas on the comal de acero with some of the meat juices for flavor and onions and nopales simmering in the meat juices.

The best meat choice here is suadero, a thin cut from beef brisket that’s “tender, bursting with flavor, and served with some proper condiments and soul,” says streetgourmetla.

The tent shows up from 6 to 10 p.m. Sunday through Thursday (closed Tuesdays though), and stays open until 1 a.m. Fridays and Saturdays.
