Liba falafel truck has more delicious housemade toppings (more than a dozen) than many less-mobile operations, says Pei. The falafel balls are crispy, fluffy, and flavorful, but what really shines are those toppings, she says. “Each topping is bright and flavorful. They really stand out against each other when piled into the pita, and each bite took on a slightly different flavor.” Pei’s favorites so far: cardamom pickles, tomato chutney, olive tapenade, and fresh, soft goat cheese. Cynsa recommends the rosemary peanuts, marinated carrots, eggplant, and a dash of the spicy harissa sauce.
