Spain is known more for its olive oil and jamón than for its cookies, but O&CO.—an importer that sources products from all over the Mediterranean—has opened our eyes to the world of Iberian sweets with these biscuits. They’re called tortas de aceite, and they’re anise-y, crunchy, and sweet (but not overly so) with a subtle olive oil taste. The tortas are great on their own, but they are even better when layered with ice cream and honey for a makeshift napoleon.
