Tacos and fried eggs are my two favorite things: Why not combine them? So I came up with these six variations on the breakfast taco, all of them topped with an egg fried sunny-side up. I think the best thing about fried egg tacos is what happens to the yolk: It breaks when you pick up the taco, coating the filling with a rich yellow sauce.

Bacon, Egg, and Tomato Breakfast Taco

Crisp bacon, ripe tomato, and a runny-yolked egg taste amazing in a soft tortilla, especially if it’s been charred over a burner. (If you have an electric stove, though, not to worry; it’ll still taste delicious.) Make this when heirloom tomatoes are at their peak; the rest of the year, try roasting your tomatoes first if they’re a bit lackluster. Get our Bacon, Egg, and Tomato Breakfast Taco recipe.

Yes, beans belong in tacos (and have well before the Washington Post tried to act like they invented it). Our version may not be “authentic” but a fried egg and grated cheddar plus refried beans in a soft tortilla is a gloriously messy breakfast. Use Mexican crema if you can find it; if not, Greek yogurt makes a surprisingly good substitute. Get our Fried Egg and Beans Breakfast Taco recipe.

True picadillo would include tomatoes and potatoes, but well-seasoned ground beef plus a squeeze of ketchup (or tomato-based salsa if you just gasped in abject horror) are all you need to accompany your fried egg for this easy a.m. taco option. By all means, though, serve hash browns or home fries on the side—and/or folded up in the tortilla too. Get our Fried Egg and Beef Picadillo Breakfast Taco recipe.
