If you don’t have a pizza stone, a preheated cast-iron skillet or griddle makes a good stand-in, supplying the concentrated heat to produce a great crust. But how can you transfer the prepped pizza to a superhot pan without the risk of burning yourself? Chowhounds recommend parchment paper—and some say it’s also the best option even if you do have a stone.
