Red Hill’s Eggs Benedict with a Twist

At Red Hill in Echo Park, traditional eggs Benedict has gotten a serious makeover. In one version, yam biscuits are adorned with a poached egg, avocado, tomato, pickled cabbage, and chile mole sauce; in another, the dish has serrano ham, chard, and Parmesan cream. The beer-battered onions rings make a great side.
