The basic fried egg sandwich is a great dish in its simplicity. But inspired by all the cool breakfast sandwiches we’ve seen pop up at restaurants around the CHOW.com offices, we’ve created three new recipes that take the breakfast sandwich far beyond ordinary. Try them for a weekend breakfast, or get ambitious and wrap them up to go on weekdays. Despite the messy nature of runny egg yolks and Hollandaise sauce, we found that, wrapped tightly in foil, these sandwiches are the kind of portable breakfasts that make office coworkers envious.
