smoked meat and fish

Are smoked meats, fish and tradionaly cured bacon and ham eaten alot in this area?, why I am asking is: I have a small smokehouse in England where I smoke top quality meat and fish, however the British public are moving away from traditional food in favour of ready meals. If there is demand for these type of products in the US I would think of moving over there if I could. I supply some the best resturaunts in the UK including Wintringham Fields Resturaunt which has been voted best food in the UK twice in the last three years.

Any feedback would be welcome.
